Thai Peanut Salmon Filets
Here is a great recipe for salmon (from Bob Kaplan).
INGREDIENTS
- Fresh Salmon Fillets (1/3 # per person)
- San-J All Purpose Thai Peanut Stir-Fry & Dipping Sauce
- 1/4 cup (for 2-3 fillets) Unsalted (or lightly salted) Dry Roasted Peanuts, chopped.
DIRECTIONS
- Preheat oven 500 degrees with rack in center of oven.
- Spray pan with vegetable spray and place the fillets skin side down.
- Pour the Thai Peanut Sauce on the fillet and brush to spread generously and evenly.
- Spread chopped peanuts on the sauce.
- Bake at the high temperature until meat flakes--be careful not to overcook (2-3 fillets usually take 12 minutes without turning.
