Peanut Brittle
So peanuty...so brittlely
INGREDIENTS
- 2 egg yolks, beaten
- 1/2 C. sugar
- 1 C. milk
- 1 C. half and half or whipping cream
- 1/2 C. crushed peppermint stick candy (or more for a stronger flavor)
DIRECTIONS
- Line base and sides of a shallow jelly roll pan with foil or waxed paper. Brush foil with melted butter or oil.
- Combine sugars, syrup, and water in a large, heavy-bottomed pan. Stir over medium heat without boiling until the sugars dissolve completely. Brush the sugar down from the sides of the pan with a wet pastry brush.
- Add butter and stir until melted.
- Bring the mixture to a boil. Do not stir.
- Boil for about 15-20 minutes....or boil until a teaspoon dropped into cold water can crack...or boil until 275 degrees on a candy thermometer.
- Remove from heat immediately. Fold in peanuts.
- Pour into prepared pan and smooth the surface.
- When cool, break into pieces. Store in an airtight container in a cool, dry place for up to 3 weeks.
