Black Eyed Peas

Black eyed peas

Great for New Year's Eve

INGREDIENTS

  • 1 package of dried black eyed peas
  • 1/2 lb. ham, coarsely chopped
  • 2 carrots, cut up
  • 2 celery sticks, coarsely chopped
  • 1 onion, coarsely chopped
  • 1 tsp. minced garlic
  • 1/3 C. brown sugar
  • 1 bay leaf
  • 1/4 tsp. ground black pepper
  • water
  • salt to taste

DIRECTIONS

  • Soak the peas overnight in about 6 cups of water.
  • Combine all ingredients except the salt in a slow cooker, add more water until all ingredients are covered.
  • Cook on high for about 5-6 hours until the beans are tender, stirring occasionally. (You should see a bean or two starting to split apart.)
  • Add salt if you want.
