Black Eyed Peas
Great for New Year's Eve
INGREDIENTS
- 1 package of dried black eyed peas
- 1/2 lb. ham, coarsely chopped
- 2 carrots, cut up
- 2 celery sticks, coarsely chopped
- 1 onion, coarsely chopped
- 1 tsp. minced garlic
- 1/3 C. brown sugar
- 1 bay leaf
- 1/4 tsp. ground black pepper
- water
- salt to taste
DIRECTIONS
- Soak the peas overnight in about 6 cups of water.
- Combine all ingredients except the salt in a slow cooker, add more water until all ingredients are covered.
- Cook on high for about 5-6 hours until the beans are tender, stirring occasionally. (You should see a bean or two starting to split apart.)
- Add salt if you want.
