A-Z Bread

This recipe is the ultimate fruit/veggie bread recipe that you can adapt for anything.

INGREDIENTS

  • 3 C. flour
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1-2 Tb. cinnamon (I like a lot.)
  • 1/2 tsp. baking powder
  • 3 eggs
  • 1 C. oil
  • 2 C. sugar
  • 2 C. any finely chopped veggie or pureed fruit
  • 1 Tb. vanilla
  • 1 C. chop nuts (optional)

DIRECTIONS

  • In a medium bowl, sift the dry ingredients.
  • In a separate, larger bowl, beat the eggs. Add oil and sugar.
  • Add the dry ingredients to the moist ones.
  • Add the fruit or veggie and vanilla. Mix well.
  • Add nuts, optionally.
  • Spoon into 2 well-greased 9x5" loaf pans (or 3 3x8" -- or any combination similar).
  • Bake at 325 for 1 hour.

Suggestions for A-Z ingredients: grated apples, grated carrots, chopped oranges, chopped apricots, chopped peaches, grated zucchini, or mashed bananas...
